These factors lead to humid and still conditions with morning fogs that are perfect for the development of botrytis cinerea.

The Details

Tasting Note Light gold with green-gold tints. Subtle and delicate aromas of white flowers, cumquat, hints of nutmeg and cardamom. These aromas will develop more complexity and richness over time moving to beeswax, marmalade, and candied citrus zest.
Best Enjoyed With A lovely aperitif with paté or equally enjoyable at the end of a meal with a cheese plate or dessert; roasted pears with walnut and ginger.
Treatment The botrytised grapes were selectively handpicked with the fruit showing pure finesse, richness and balance. The grapes were whole bunch pressed and the juice given a cool, even fermentation to ensure the retention of the pure fruit characters.

It's lovely wine
I've drunk a fair few bottles of this over the years, and it is such a lovely expression of botrytised Eden Valley riesling. It always seems to be on the knife's edge. It's kinetic, a constant dance between unctuous fruit with its apricot, lemon barley, candied lime, honeycomb, wildflower, ginger and jasmine tone and the fine, minerally acidity that keeps all in line. It's lovely wine. Sweet, balanced and precise.
